Ageing:
20 months in extra fine grain French oak new barrels.
Aged in its own lees for 8 months.
Wine Making:
This wine is made with grapes of the Tempranillo variety from our COSTALARBOL plot, planted in 1997.
We carry out continuous samplings and when it reaches the optimum ripening point, it is harvested.
Fermentation takes place in temperature controlled tanks and it is chimed with regular pumping over and punch down. It is devated and transferred to the barrels where the malolactic fermentation is carried out, remaining 20 months in extra fine grain French oak new barrels with quarterly rackings.
The result is a fine, elegant wine, with great ageing potential.
The wine goes out of the winery in its fifth year.
Tasting Note:
Intense cherry-red colour wiht hardly any sign of evolution.
Spicy on the nose, with hints of clove, cinnamon and mint.
On the palate fresh, with very refined tannins and predominance of red fruit with cinnamon notes.
Easy to drink, with a lingering finish that leaves reminiscences of exceptional balsamic notes.
Food Pairing:
This wine is ideal with ham, semi cured cheese, not very spicy stews, legumes, poultry, red meat and grilled or roast meat.

Between 16º and 18º
